Wednesday, July 22, at 6pm the Rebekah’s will be hosting the Odd Fellows monthly potluck. On the menu this month is make-your-own pizza. All ingredients will be provided by the Rebekah’s. Please bring an appetizer or dessert to share.

Speaking of desserts, this week I thought I’d share another recipe from the Knights Ferry Garden Club Cookbook, published in 1984. I thought this cake looked simple, unique and delicious. I might try it myself. Let us know how it turns out if you make it, maybe the perfect dessert to bring to the potluck! Also if anyone knows what “oleo” is (listed in the ingredients below) write in and let me know. I love these old cookbooks because there’s a whole slew of ingredients that are specific to the time it was written. Definitely a treasure and blast from the past. Enjoy!

Mississippi Fudge Cake - submitted by Shirley McPhee

1 cup oleo or butter

½ cup Hershey’s cocoa

1 cup coconut

1 cup nuts

1 tsp baking powder

4 eggs

2 cups sugar

1 ½ cups flour

1 large jar marshmallow creme

Melt butter and mix in everything but the marshmallow crème. Grease and flour pan (10x15”) and spread the mixture in. Bake for 25-30 minutes at 350 degrees. It will not look like it is done. After taking cake from oven immediately spoon on the marshmallow crème in globs and put back in oven for 3 minutes (turn oven off). Let cool.

Icing:

1 stick butter or margarine, softened

2 cups powdered sugar

½ cup cocoa or Nestle’s Quik

½ cup evaporated milk

1 tsp. Vanilla

Mix icing ingredients well in a bowl. Spread on cake. (Icing will keep 1 week)
